Le uve vengono raccolte di prima mattina per preservare al massimo i profumi e gli aromi.
Description
Lancestrale è un rosato ottenuto tramite salasso dalla stessa massa con cui facciamo l’Esino Rosso Doc.
Le uve appena raccolte sono messe in vasca a macerare sulle bucce, dopo alcune ore di contatto estraiamo una massa di liquido e la mettiamo in un contenitore di acciaio separato. Teniamo questa massa a bassa temperatura per far rallentare il processo fermentativo ed avere una decantazione del mosto quanto più possibile lunga.
Quando mancano pochi milligrammi di zucchero residui il mosto viene messo in bottiglia per svolgervi la fine della fermentazione e generare la produzione naturale di anidride carbonica che porta alla presa di spuma.
